Turkey Sausage, Peppers & Pasta

recipe 4An easy, tasty and versatile meal to whip up in a matter of minutes is this family favorite. It’s the complete meal with carbs, protein, veggies and healthy fats. If you are vegetarian, skip the turkey sausage or add a “meatless” product. The veggies are interchangeable as the garden grows and local farmer’s markets offer more variety.

  • Extra Virgin Olive Oil
  • Bell Peppers
  • Red Onion
  • Minced Garlic
  • Sausage (I used Eckrich Skinless, Smoked Turkey Sausage)
  • Pasta (I used Barilla Whole Grain Penne)
  • Parmesan Cheese

Boil water for pasta. In a separate large skillet, heat olive oil. Add sliced peppers and onions. Sautee until onions become translucent but not too soft. Add a few teaspoons of minced garlic or to taste. Remove from heat and place in separate bowl. The peppers and onions will create some juice. In the same skillet cook sausage according to package directions. Once the sausage is cooked add the peppers and onion back into the skillet with the sausage. Drain pasta well and add to the sausage/pepper mixture. Garnish with some parmesan cheese. You really don’t need additional sauce due to the olive oil and liquid released from the veggies. But you can add a little more olive oil or even red sauce if desired. Enjoy!
